What to include when you submit your mobile food plan for review

Know your mobile food facility classification and what to prepare for your check with the health department.

Know the type of facility you have

Your mobile food facility will either be on:

  • A public right-of-way
    Like a sidewalk, street, or alley
    or
  • Private property
    Like a private parking lot, Port Authority location, or parks and recreation facility

There are also 5 different types, or "classifications," for mobile food facilities.

Prepare the following documents

"Plan check" applications must include:

1. Your menu

Have a list of:

  • all the food that will be prepared, cooked, or served to the public
  • where, when, and how each item is prepared and cooked

2. Floor plans (to scale)

Give 2 sets of plans for your mobile food facility.

These should specify your:

  • Equipment
  • Surfaces
  • Materials

They also might include one or more of the following:

  • Handwashing sink (must be 9-inch by 9-inch by 5-inch) 
  • 3 compartment sink with 2 integral drainboards (must be 12-inch by 12-inch by 10-inch) 
  • Mechanical refrigeration unit, powered by electric power or generator
  • Water heater
  • Potable water tank
  • Liquid waste tank
  • Mechanical exhaust ventilation system
  • Food storage compartments
  • Food contact surfaces that are easily cleanable and washable (preferably stainless steel)
  • A maximum of 2 pass-through service openings, limited to 216 square inches each
  • Insignia issued by California Housing and Community Development (HCD)
  • Business identification printed on both sides of the food truck or cart
